Making of Efo-Riro (Rich Vegetable Stew)



Ingredients needed

1 kg fresh soko or tete (washed)

500g assorted parts of meat (washed)

225 stock fish (per-soaked)

1 medium smoked fish

225g bushmeat (washed)

225g cooked crab claws

4 snails (washed with lemon juice)

225g ground crayfish


225g fresh pepper

500g fresh tomatoes

1 small tin tomato pure

2 medium onions

190ml palm-oil

Teaspoon of iru

1pt stock fish

Salt to taste



Method of preparation
  1. Place the washed meats in a large pot, add a drop of water or stock
  2. Season with salt and ground pepper and boil for 30 minutes or until tender
  3. Add the smoked fish, stock fish, crab claws and snails and cook for another minute
  4. Remove from heat and place in a clean bowl
  5. Wipe the pot out and pour in the palm oil. Place pot on fire to heat up the oil.
  6. Ground the tomatoes, onion, and chilies, add to the hot oil and fry for 10 minutes and stir frequently.
  7. Add tomatoes puree and cook for 5 minutes until blended.
