Jollof Rice


Ingredients needed

6 cups of rice, 1 chicken, 500g meat, 250 salt pork, 2 large rice tomatoes, 1 large onion, 1 tin tomato paste, thyme ½ teaspoon, curry, salt, pepper to taste and sufficient water.

Method of preparation

Step 1: Prepare chicken; soak salted pork to remove salt. Wash meat, chicken and slated meat, cut into moderate sizes. Fry meats and chicken on hot oil until brown.



Step 2: slice 2 onions, 2 tomatoes and grind 10 onion, 2 tomatoes and pepper. Then make a rich stew with tomatoes, onions, pepper and tomatoes paste, season with thyme and curry. Add fried meat and chicken and little water, allow to boil for 5-10 minutes. Remove out some pieces meats and chicken into a sauce pan and cover (to be used to dress cooked rice).


Step 3: pick rice, parboil rice for 8 minutes, wash to remove surplus starch and drain with a big pan or pot, put in stew and add enough water to cook rice. Add salt and boil slowly, when water start boiling, and rice, stir and cover. Boil briskly for about 5-10 minutes. And reduce heat, stir ocassionally with heat reduced, wait till water soak up in rice, then cover pan with thick cloth and place lid on. Sprinkle in a little water if rice is hard, when cooked, the color will be bright reddish and grain will scatter. To serve, put rice on suitable plate, serve with meat cooked with rice, add dressed rice with reserve meat and chicken on top of rice. Serve with boiled cabbage, green vegetable or alone.
